Claire Berton-Carabin makes an important contribution as research director at the BIA (Biopolymers Interactions Assemblies) unit of the INRAE Pays de la Loire Research Center, focusing on the nutritional quality and sustainability of foods, and in particular on lipids and emulsions.

Each year, the INRAE Laurels honor the diversity of talent and career paths at INRAE. Claire Berton-Carabin is interested in food emulsions, mixtures of two immiscible liquids, such as oil and water, which can be stabilized by a third ingredient, the emulsifier. To his credit, she has international experience and numerous collaborations. At her side, a team of experts in the field of vegetable proteins and lipids. Claire now focuses on the microstructure of these emulsions and their key components with the desire to do more and differently: stabilizing particles of plant origin or of solid nature and biosourced, fragmentation processes with low environmental impact ...
