Claire Berton-Carabin is Research Director at INRAE. She obtained her Ph.D. in physical chemistry of food within the BIA unit of this institute (2001), after which she performed a first postdoc project at Penn State University (USA) for 15 months, and a second one at Danone-Nutricia Research in Utrecht (The Netherlands) for 6 months. She then got appointed as Assistant, then Associate Professor at Wageningen University and Research (WUR, The Netherlands) from 2013 to 2020. Within the Agrotechnology and Food Sciences Department of this university, she developed a research line focused on the interplay between the structure of food emulsions (in particular, regarding the oil-water interface) and their physical and oxidative stability.  


In the frame of her new position within the ISD team in the BIA research unit, Claire’s research project is entitled “Healthy, sustainable and stable: Towards a new generation of food emulsions”. Her objective is to facilitate the formulation of multiphase food matrices that address the current incentives for high nutritional quality and sustainability. This will be achieved by implementing an integrated strategy based on a multiscale approach, all the way from emulsion production to digestion.
