Health Risk-Benefit assessment associated with preperation and consumption of beef meat. Methodological approach (J.M. Membré, F. Pierre (ToxAlim), S. Guillou)

Public health risk-benefit assessment is a discipline which recently emerged thanks to the efforts of public health authorities (especially EFSA). It aims to quantify risks and benefits globally (considering altogether chemical, microbiological and nutritional aspects) and express them into a common metric (e.g. number of ill, number of lost or gained years of life) in order, in a second step, to give recommendations to producers, food processers and /or consumers to mitigate risks and increase benefits.
The objective of the PhD thesis is to apply new concepts to the beef meat model, by considering toxicological  (e.g. potential adverse health effects: colorectal cancer), microbiological (e.g.potential adverse health effects: foodborne outbreaks) and nutritional (e.g. potential beneficial health effect: coverage of protein requirements) aspects. This assessment will enable to converge towards a global health assessment associated with the preparation /consumption of red meat which, although possibly incomplete, will lay down the foundation. The developed methodology will also enable to identify the gaps and hence open other paths of research. At last, although methodological, the study will enable to identify and evaluate recommentations towards consumers regarding preparation, cooking and consumption of beef meat.
The PhD project called VacaRisk requires different scientific disciplines, including microbiology, chemistry, nutrition, applied statistics, mathematical modelling, probability calculations ; it falls within the thematical field of food safety and more generally in public health.
