About the Foodborne Pathogen Campylobacter

Editorial in the famous international journal: Frontiers in Microbiology

A research thematic on Campylobacter was suggested to the editorial board of the journals of the Frontiers series:  "About the foodborne pathogen Campylobacter". This editorial action has been jointly conducted by Odile Tresse (SECALIM, INRA, Nantes, France), Avelino Alvarez-Ordóñez (Universidad de León, Espagne) and Ian F. Connerton, University of Nottingham, Nottingham, UK.

Campylobacter represents the first cause of zoonosis in the European Union. During the last decades, cases of campylobacteriosis increased everywhere in Europe. In 2017, the regulation of the European Commission established a process hygiene criterion for Campylobacter, not to exceed 1000 cfu/g in food products issued from chicken carcasses. 
The perspective of this work was to better understand and control this pathogen in the food processing / chain in the poultry sector.

In total, 19 scientific articles will be published on original studies associated with both pathogens, C. jejuni and C. coli. They will be soon gathered in an electronic book available in open access. 

The different themes covered are:

  • Epidemiology and animal carriage
  • Host interactions
  • Control strategies
  • Metabolism and regulation, ans especially it response to oxidative stress
  • Methodology to improve cultural technique
  • Chicken gut microbiota challenged with Campylobacter
