Brochothrix thermosphacta is considered to be one of the main spoilage bacteria in food. Few studies have also shown its presence in the environment of food factories throughout the manufacturing chain. These include surfaces in contact with foodstuffs, which thus constitute reservoirs of contamination. There are currently no studies on the ability to adhere to surfaces through biofilm formation in this bacterium.
The objective of this project is therefore to characterize the adhesion capacity of B. thermosphacta through the formation of bacterial biofilms, and to study the impact of stresses encountered in the environment of factories and during transformation processes. (cold stress, chemical stress of cleaning-disinfection products, etc.) on adhesion to surfaces by B. thermosphacta.
